Ok, I guess you see what my point is. Vanilla sugar is the easiest thing to make and buying vanilla sugar is ridiculous and a waste of money. Apart from that, you probably usually buy vanillin sugar, cause it’s so waaaaay cheaper. The difference between vanilla and vanillin sugar is that vanillin sugar is chemical. And if I can avoid it, I’d rather not put chemicals into my body.
What you need is sugar and a vanilla pod. But wait, the best part comes now: You don’t need a vanilla pod with its precious seeds in it, you just need the scraped vanilla pod. So when a recipe calls for its mark, instead of throwing the pod away, you can use it for awesome vanilla sugar. Isn’t that grand?
Makes as much sugar as you’ll ever need in your life
- Granulated sugar
- Scraped vanilla pods
Put some sugar in a big screw top jar. Everytime you have a scraped vanilla pod, stick the pod into the sugar. It takes about two days until the sugar gets the flavour. Once you’ve done that, you will have vanilla sugar forever. Everytime you have some scraped vanilla beans stick them into the sugar, and when some of the sugar is used up, just refill the jar. C’est ça.
Update: If you have a food processor, add the sugar and the whole (yes, the whole) bean to it and blend on high speed. Sieve to remove the remaining parts of the pod. The result is a heavenly-smelling vanilla sugar. Also, a perfect giveaway.
