Being a big fan of aubergines and pasta with tomato sauce, too, this recipe is the dish to satisfy my taste buds.

Serves 2

  • 2 garlic cloves, peeled and sliced
  • some oregano leaves, preferably fresh
  • 1/2 chili, sliced
  • 1 tbsp tomato purée
  • 1 aubergine, cubed
  • 2 tomatoes, cubed
  • olive oil
  • 180 – 200 g Pasta, preferably Orecchiete
  • a handful of cherry tomatoes (they really make a difference!)
  • salt and pepper

Before you start, make sure you have prepared the vegetables as listed above.

Heat the oil in a pan and add the garlic, oregano and chili. As soon as the garlic starts to colour lightly, add the tomato purée, aubergines and tomatoes and deglaze with half a cup of water. Let simmer for about 10 minutes.

Meanwhile prepare the pasta according to package instructions (without oil or butter!). Add the cherry tomatoes to the sauce and let simmer for another 5 – 10 minutes. Season with salt and pepper and add to the pasta.
