As people living in the 21st century seem to be very concerned about their time running away like a little kid hunted by an utterly horrific and angst-inducing monster, I’ve decided to let you know about this recipe. It is unbelievably easy to prepare and won’t take too much of your precious time.

Quinoa is a pseudo-cereal I’ve discovered a couple of years ago and love ever since. It’s just amazingly yummy and I’m sure your guests will appreciate it, too.

Serves 4

  • 100 g quinoa
  • 1/2 little onion (red, if you like)
  • 2 handful cherry tomatoes
  • 1/2 cucumber
  • olive oil
  • lemon juice
  • salt and pepper

Wash the quinoa til the water is clear. Set to boil in a pot with 250 ml of water and add some salt. Let it cook for about 15 minutes and set aside.

Meanwhile cube the cucumber and onions and halve the tomatoes. Add to the cooled down Quinoa and season with oil, lemon juice, salt and pepper.

That’s it. Enjoy.
