Yes, this post also includes a recipe. A recipe for a rather healthy chocolate nut cake. Random cake? Well, there are many random people on this planet that just mix together some ingredients, make a video, upload it on YouTube and call it Random Cake. One of them is my cousin. You never know what comes out of an experiment. But usually it’s good.
Makes one cake (23×23 cm)
- 50 g ground almonds (1/2 cup plus 1 tbsp)
- 50 g ground walnuts (1/2 cup)
- 140 g flour (1 cup)
- 170 g brown sugar (1 cup)
- 20 g cocoa powder (1/4 cup)
- 1 tsp bicarbonate
- pinch of salt
- 200 g almond milk (1 cup)
- 80 g olive oil (3/4 cup)
- 1 tbsp cider vinegar
Europeans: Notice I used grams instead if mililitres because I find it way easier to weigh the oil.
Preheat the oven to 180° C (350°F). In a large bowl, combine the dry ingredients (nuts, flour, sugar, cocoa, bicarbonate and salt) and add the other ingredients. Fill the batter into the baking tin lined with baking paper. Bake them for about 35 – 40 minutes and let them cool in the tin. Tadaaa.
